Potol Sandesh or Parwal Ki Mithai





Parwal Or potol or  pointed gourd is very popular Indian vegetable  during summer season.We must have prepared various savoury dishes with parwal.In North India,specially in Bihar,Jharkhand and also few states make a delicious sweet using this tasty and healthy vegetable.  It is slightly time consuming but the result is definitely worthy.

Ingredients

Parwal or Potol or Pointed Gourd-250 grams
Sugar-3/4 cup + 4 teaspoons
Water-1/2 cup
Mewa or Khoya-100 grams
Rose water -few drops
Pistachios or pista -1/4 cup(soaked,peeled and chopped)
Silver Varak -Few(optional)

Methods

Wash the parwal properly,and pat them dry with a cloth.

Peel the parwal and cut both the top sides.

Slit the parwal keeping both end joined and scrap out the pulp and seeds.

Pour a big vessels with water,add parwal into this water and boil for 5 minutes.

Switch off the gas, cover and keep the parwal drenched for another 5minutes.Then drain the water through a strainer.

For sugar syrup,add 3/4 cup sugar and 1/2 cup water in a bowl,place the bowl on gas stove and let the water boil on medium flame.When the water will get started boiling,simmer the gas and let it boil until it is just bubbling.

Drop the boiled parwal into this sugar syrup one by one slowly,and cook them for another 5minutes.Then switch off the gas,cover the bowl and keep the parwal into thia sugar syrup for 3 hours .

In the meantime,roast the mewa in a pan with 4teaspoons sugar until soft.Add few drops rose water.

Take out the parwal from sugar syrup and arrange then in a plate.

Fill each parwal with mewa stuffing and then garnish with chopped pistachios and silver varak.
